Boot Hill Distillery Bourbon Whiskey
Boot Hill Distillery Bourbon Whiskey is Kansas's first soil-to-sip craft bourbon — 90 proof (45% ABV), 750mL, pot-distilled in Dodge City, Kansas from the Kelman family's own grain: 51% corn and 49% hard red winter wheat, with no rye in the mash. Filled into new, charred American white oak barrels starting in January 2017 and aged at least two years through hot, dry Kansas summers and bitter cold winters, it pours caramel, green apple and vanilla with a toffee-and-baking-spice palate. It is available to order online at Del Mesa Liquor.

Kansas's First Soil-to-Sip Bourbon
Boot Hill controls this bourbon from planting to pouring: fifth-generation farmers growing the corn and wheat, a 500-gallon pot still in Dodge City's former City Hall, and Kansas weather — scorching summers, freezing winters, constant wind — working the barrels hard. The high-wheat mash (49% wheat is far above the wheated-bourbon norm) makes it soft and fruit-forward where a rye-recipe bourbon would be spicy. It earned a place on Fred Minnick's Top 100 American Whiskeys of 2023. Tasting Notes
Nose: Caramel, green apple, leather, vanilla, cedar and black tea. Palate: Toffee, baking spice, caramel apple, bran cereal and pecan. Finish: Honey, baked goods, herbal tea and oak.
How to Enjoy
Neat or with one cube — the wheated softness is the point. Its caramel-apple palate also builds a distinctly Kansas Old Fashioned.
