The Rums of Mexico Caña Cristalina Rum is a traditional Mexican sugarcane juice rum from PM Spirits’ Rums of Mexico project, made by Marcos López in Cosautlán de Carvajal, Veracruz, from the fresh-pressed juice of the regionally rare Cristalina cane variety, bottled at 49.4% ABV in a 700mL bottle with nothing added after distillation. López, who also farms coffee and limes and learned to distill from his father and grandfather, ferments the juice — the “caldo,” or broth — and runs it over open flame through a five-plate copper and stainless steel still built by his father. It is available to order online at Del Mesa Liquor.

A Cane Variety Few Farmers Still Grow

The Rums of Mexico bottles the traditional cane spirits of Veracruz, Oaxaca and Jalisco that locals call aguardiente, cañita or simply ron, naming the farmer, the village, the cane and the still on every release. Cristalina is a delicate cane, susceptible to plagues, that few farmers around Cosautlán still bother to cultivate — which is exactly why PM Spirits bottled it on its own. Tasted beside his Caña Dura, it shows how much cane variety alone shapes a rum. Explore more rum and cane spirits across our spirits shelves.

Tasting Notes

Clay, umami, truffle oil and cola on the nose, over a mineral, grassy freshness. The palate brings sea salt and serrano ham with a soft cane sweetness, finishing dry and stony with stone fruit skin. It is the quietest pour in the range — think rhum agricole with the volume turned down.

How to Enjoy

Sip it neat to follow the cane, or build a Daiquiri or Ti’ Punch where a grassy, mineral rum does the talking. Browse more cocktail staples at Del Mesa Liquor.
