The Rums of Mexico Caldo Rum is a traditional Mexican sugarcane juice rum from PM Spirits’ Rums of Mexico project, made by Orlando Vásquez in Tlaltetela, Veracruz, from the fresh-pressed juice of two local cane varieties, bottled at 52.3% ABV in a 700mL bottle with nothing added after distillation. “Caldo” — broth — is the local word for fresh cane juice, and Vásquez, a second-generation cane farmer and first-generation distiller who began distilling aguardiente in 2015, ferments that juice with native yeast and runs it through a wood-fired four-plate continuous copper still. It is available to order online at Del Mesa Liquor.

Fresh Juice, Bottled at Full Voice

The Rums of Mexico bottles the traditional cane spirits of Veracruz, Oaxaca and Jalisco that locals call aguardiente, cañita or simply ron, naming the farmer, the village, the cane and the still on every release. Vásquez comes from a panela-making family, but Caldo is the fresh-juice expression: two cane varieties prized for high sugar and quick growth, pressed and fermented while the juice is still alive. At 52.3% it is the boldest pour in his range. Explore more rum and agricole-style bottlings across our spirits shelves.

Tasting Notes

Truffle, charcoal smoke, vinegar and a wild, funky edge on the nose. The palate is layered and savory — banana, charred corn, white pepper and mandarin over roasted cherries and burnt berry jam — with a smoky, brothy depth that sets it apart from any Caribbean rum.

How to Enjoy

Pour it neat or with a single cube, or give a Daiquiri real savory backbone. Browse more cocktail building blocks at Del Mesa Liquor.
