Sherry Cask Select belongs to The Dalmore's Principal Collection (launched October 2020), and its sherry program is deliberately different from the classic Dalmore 12: instead of the core expression's Gonzalez Byass oloroso, Paterson commissioned three Andalucían cask houses to build bespoke casks seasoned with a custom blend of aged Oloroso and Pedro Ximénez.
