Worthy Park is Jamaica's only remaining true single estate rum producer — cane growing, distillation and bottling all happen on one property — and Spinnaker built its debut lineup around four of the world's great rum distilleries. The Texas finish was an improvisation that became the house signature: when the original shipping barrels were damaged in transit from Europe, McBrayer moved the rum into local Still Austin bourbon barrels, adding a subtle Texas note. Tasting Notes
Wild and aromatic — green, woodsy notes over nearly burnt brown butter and a touch of sooty creosote. The palate is earthy and piney with ripe tropical fruit, green banana, pineapple rind, papaya and guava, warm spice and an oily, satisfying texture; a little water opens mint, coconut and banana cream.
