Sabelotodo Mezcal Largo is a small-batch ancestral agave spirit bottled at 49.3% ABV in a 750mL bottle, made from wild Largo agave — the Tobasiche form of Agave karwinskii — in Santa Catarina Minas, Oaxaca, Mexico, by maestro mezcalero Felix Cruz. The wild plants for this batch were harvested at 14 to 15 years of age, and the release totaled just 72 bottles.

The Story

Sabelotodo began in 2011 as a project devoted to the micro-regions of Mexico where agave spirits have been made for generations, and it comes from the same founder as Mezcal Legendario Domingo. Largo is one of the tall, trunk-forming karwinskii agaves of Oaxaca, known locally in Minas as Tobasiche, and it is slow to mature — the wild plants behind this bottle grew for 14 to 15 years before harvest. Felix Cruz, who started making mezcal in Santa Catarina Minas at 16 and founded his own palenque at 19, produces it with his brothers at Palenque La Tentacion using the village's ancestral Minero methods from start to finish.

Tasting Notes

Retailers describe this Largo as an incredibly smooth mezcal with soft mineral flavors and a deep sense of place. The long rest before bottling — three years, per retailer batch notes — rounds off the edges of a spirit bottled just under 50% ABV.

How to Enjoy

This is a sipping mezcal: pour it neat into a copita, give it a minute to open, and take it in small sips. A 72-bottle batch of wild-agave mezcal is a collector's pour — share it with people who will appreciate it, alongside aged cheeses, charcuterie, or dark chocolate.

Frequently Asked Questions

What is Largo agave?

Largo is a form of Agave karwinskii — the same family as Barril, Cuishe, and Tobasiche. One retailer lists this exact bottle as "Largo (Tobasiche)," and the bottle's own label names Agave karwinskii. It grows wild and takes well over a decade to mature; this batch was harvested at 14 to 15 years.

How many bottles were made?

Retailer batch notes put the release at 72 bottles, rested three years before bottling. When it is gone, there is no second run of the same batch.

How is it distilled?

The wild agave is pit-cooked, dry-fermented for 10 to 14 days, broken down by machete, and crushed entirely by hand with wooden mallets. After a second fermentation in open-air Sabino oak barrels, it is distilled twice in small Filipino-style clay pot stills and proofed with the heads and tails of the distillate.

Why does the label say "Destilado de Agave" instead of mezcal?

These Minero-style spirits are sold as uncertified agave distillates — K&L lists this bottle as an "Uncertified Mezcal" — so the front label reads "Destilado de Agave" even though every production step follows Santa Catarina Minas' ancestral tradition.
