Novo Fogo Single Barrel Cachaca is a one-cask Brazilian cachaça from Novo Fogo, distilled from fresh-pressed organic sugarcane at the brand’s zero-waste distillery in Morretes, Paraná, in Brazil’s Atlantic Rainforest, aged in charred American oak and bottled one barrel at a time at that barrel’s own strength in a 750mL bottle — the bottling pictured, from the 2020 harvest, reads 41% ABV on its label. Founded in 2010 by Dragos Axinte, Novo Fogo is USDA-certified organic and carbon negative, and a share of every case funds its Un-Endangered Forest reforestation project. It is available to order online at Del Mesa Liquor.

One Barrel, One Voice

Most cachaça is blended for consistency; Novo Fogo’s Single Barrel program does the opposite. The cane is grown organically on the estate, cut by hand, fermented with natural yeast and run once through a copper pot still, then laid into charred American oak for up to three years — and each cask is bottled on its own, with the barrel number and proof printed on the label, so no two releases pour exactly alike. It is the cachaça that put Brazil’s national spirit on serious American back bars. Explore more cane spirits in our rum range and the wider spirits shelves.

Tasting Notes

Burnt caramel, butterscotch and vanilla from the oak over the spirit’s natural cane and tropical fruit, with the house notes of banana bread, cinnamon bark and coffee that run through Novo Fogo’s aged releases. The finish is long and smooth — more in common with a good aged rum than with the sharp cachaça most people meet in a caipirinha.

How to Enjoy

Sip it neat first, then try it where you would reach for bourbon — an Old Fashioned built on Single Barrel is a revelation — or give a caipirinha real oak depth. Find the rest of the build in our cocktail ingredients.

Frequently Asked Questions

Why does the proof vary?
Each barrel is bottled at its own strength with no blending, so proof and character shift a little from cask to cask; the barrel number and ABV are printed on every bottle’s label. The pictured 2020 bottling is 41% ABV.

How is cachaça different from rum?
Cachaça is distilled from fresh sugarcane juice, not molasses, which gives it a grassier, fruitier cane character; aged expressions like this one drink close to a fine rum.

Is it organic?
Yes — USDA-certified organic, made at a carbon-negative, zero-waste distillery in the Atlantic Rainforest.
