Marolo Grappa di Brunello
Marolo Grappa di Brunello is distilled in Alba by Distilleria Santa Teresa (Marolo, est. 1977) from the fresh Sangiovese pomace of Brunello di Montalcino — the leading Brunello estates of Montalcino, Tuscany supply their pomace to Paolo Marolo, one of Italy's most respected master distillers.
Distilled in discontinuous bain-marie copper stills and rested in stainless steel rather than wood, it stays crystal clear and true to the grape. The perfume is delicate, fresh and floral — the iris on the label is its signature note — with peach, apple and a touch of minerality, and a soft, elegant palate that mirrors the aromas. Bottled at 42% ABV, it is best served neat or lightly chilled as a digestif. It is the unoaked counterpart to the barrel-aged Marolo Grappa di Barolo.
