Hardin's Creek Low Distillation Profile 8 Year Old Bourbon Whiskey is the deep, heavy end of the Distillation Series from the James B. Beam Distilling Co. in Clermont, Kentucky. The three-expression series holds the mash bill and fermentation constant and changes only the first distillation: this Low expression was taken off the still at a 105-proof low-wine target, keeping more of the heavy grain and fermentation character in the spirit. After eight years in oak it is bottled at 109 proof (54.5% ABV) in a 700mL bottle, emphasizing concentrated caramel, dark chocolate, toasted nuts and barrel char. It is available to order online at Del Mesa Liquor.

One Variable: Distillation

Hardin's Creek is Freddie Noe's experimental series for the James B. Beam Distilling Co., built to isolate the decisions that shape bourbon. The Distillation Series is its most technical chapter yet: identical mash bill, identical fermentation, three different distillation proof targets. The Low expression shows what a lower distillation proof preserves — a heavier, oilier spirit that takes on chocolate, nut and char over eight years. Taste it against the brighter Hardin's Creek High Distillation Profile 8 Year Old Bourbon Whiskey, and browse the full Hardin's Creek collection.

Tasting Notes

The nose is rich with caramel, toasted nuts and earthy oak. The palate runs dark — baking chocolate, concentrated caramel and pronounced barrel char — and the finish holds on roasted nut, charred oak and earthy cocoa.

How to Enjoy

Start with a small neat pour, then add a few drops of water and watch the chocolate and caramel deepen. For the full experiment, pour the Low and High profiles side by side. More Beam family releases live on our Jim Beam shelf and across the bourbon whiskey collection.

Frequently Asked Questions

What does 'Low Distillation Profile' mean?
The new-make spirit was collected at a lower first-distillation target — 105 proof low wines — which retains more heavy grain and fermentation character than a higher distillation proof.

How does it differ from the High Distillation Profile?
Same mash bill, fermentation, age and bottling proof; only the distillation target changes (105 vs 120 proof low wines). Low drinks darker and richer; High drinks brighter and fruitier.

How long was it aged?
Eight years, and it is bottled at 109 proof (54.5% ABV) in a 700mL bottle.

Who makes Hardin's Creek?
It is a limited series from the James B. Beam Distilling Co. in Clermont, Kentucky, overseen by eighth-generation distiller Freddie Noe.
