Dark Arts Sherry Garcia Vol. 3 Oloroso Sherry Cask Finish Bourbon Whiskey is the third volume of Sherry Garcia, the Oloroso sherry-finished series from Dark Arts Whiskey House of Lexington, Kentucky. The straight bourbon starts from a high-rye mash of 60% corn, 36% rye and 4% malted barley, distilled in Indiana and aged 8.5 years before finishing in Oloroso sherry wine casks. It is bottled at cask strength — 114.06 proof (57.03% ABV), non-chill filtered, in a 750mL bottle whose label carries its age, proof and volume right on the front. Vol. 3 pushes the series further than the 7.5-year, 113.76-proof original, and it is available to order online at Del Mesa Liquor.

The Third Pour of Sherry Garcia

Sherry Garcia is Dark Arts' love letter to the Spanish sherry cask: a bold, spice-driven Kentucky-style bourbon handed over to Oloroso wine casks until the sherry's dried-fruit depth and the bourbon's rye heat reach what the house calls powerful harmony. Each volume is a distinct bottling — new age, new proof, new balance — and Vol. 3 arrives older and stronger than the release that started the series. Tasting Notes

The nose is rich and fruit-forward — dried cranberry, dark cherry and charred orange peel over dense chocolate fudge and dark caramel. The palate layers dried cranberry, citrus zest, honey and walnut with Luxardo cherry, baking spice, charred oak and a thread of tobacco, the Oloroso cask lending sherry richness without ever swamping the bourbon. The finish is long and warming: lingering oak spice, seasoned oak and sherry depth, with a subtle barrel funk at the end.

How to Enjoy

Drink it neat first — cask strength is the point of this bottling, and the full 114.06 proof carries the dried fruit and spice in one dense wave. A splash of water softens the heat and opens softer dark fruit and oak. It also stands up beautifully beside a cigar, or as the contemplative last pour of the night. Frequently Asked Questions

How is Sherry Garcia Vol. 3 different from the earlier volumes?
Vol. 3 is aged 8.5 years and bottled at 114.06 proof. The original Sherry Garcia was 7.5 years old at 113.76 proof. All volumes share the same high-rye mash and Oloroso sherry wine cask finish, but each bottling is blended to its own balance.

What does an Oloroso sherry cask finish add?
Oloroso is a dry, oxidatively aged Spanish sherry. Its casks bring dried fruit, walnut, dark chocolate and a nutty depth that layers over the bourbon's caramel and rye spice.

Is Sherry Garcia Vol. 3 chill filtered?
No. It is bottled non-chill filtered at cask strength, keeping the full body and mouthfeel of the barrel.

Where is it made?
The bourbon is distilled in Indiana from a 60% corn, 36% rye, 4% malted barley mash, then blended and bottled by Dark Arts Whiskey House in Lexington, Kentucky.
