Cañada Oaxaca Rum is an agricole-style cane spirit made by third-generation aguardiente distillers of the Krassel family in the remote town of Santa Maria Tlalixtac, high in the cloud forest of northern Oaxaca, Mexico — the same family and hillsides behind Alambique Serrano. The family cultivates, harvests and distills 100% organic Java sugarcane grown at altitudes of up to 4,000 feet, working from fresh cane juice rather than molasses, and bottles the result at a full 65.28% ABV (130.56 proof) in a generous 1-liter bottle. Bright, grassy and expressive like a rhum agricole, with the mineral, floral and slightly funky character of Oaxaca's mountain aguardiente tradition. It is available to order online at Del Mesa Liquor.

Aguardiente From the Cloud Forest

The Krassel family's distilling story in Oaxaca runs back more than a century, to Max Krassel's arrival from Germany in 1917; three generations later the family still farms and distills off the grid on the steep hillsides of Santa Maria Tlalixtac, engineering its own tools and techniques for the terrain. Canada is their unaged cane-juice expression — the pure voice of high-altitude Java cane before any barrel touches it. Compare it with the family's aged range, like the Alambique Serrano Alambique de Cobre Rum, or browse the full rum collection.

Tasting Notes

Fresh-pressed cane, green grass and white flowers with a mineral, lightly funky mountain edge, opening into a bright, expressive palate and a long, warming finish at full strength.

How to Enjoy

Sip it neat to experience the cloud forest neat, or build a Daiquiri, a Ti' Punch or a cane-forward tiki drink — at 65.28% ABV it stands up to dilution and citrus. More Mexican cane spirits live across our spirits shelves and the rare and top shelf collection.
