Alambique Serrano Alambique de Cobre Rum
Alambique Serrano Alambique de Cobre Rum is an unaged pot still white rum from the Krassel family in Santa Maria Tlalixtac, Oaxaca, Mexico — distilled exclusively in small copper alembic pot stills from fresh-pressed Java sugarcane juice and bottled undiluted at pot still strength, 71.1% ABV, in a 700mL bottle. Where the family’s other expressions combine pot and Krassel column distillation, Alambique de Cobre is copper-pot only — the slowest, least efficient and most expressive way the family makes rum. It is available to order online at Del Mesa Liquor.

The Mezcal of Rum
The Krassel family — third-generation distillers descended from German immigrant Max Krassel, who began making aguardiente in the Oaxacan Canada in the 1930s — reserves its copper alembics for small batches: each 250-liter still yields only a few liters an hour, a fraction of the Krassel column’s output, but produces a dramatically richer, more lactic and more complex spirit. The cane is hand-harvested from steep hillsides above the distillery and fermented naturally in pine vats before double distillation at full pot still strength. Think of it as the mezcal of rum: artisanal to its core, rooted in one place, and genuinely irreplaceable. Tasting Notes
Lactic, funky and long: fresh cane juice, green vegetal notes, tropical fruit and a creamy, oily texture that carries the 71.1% strength with remarkable composure. A pure expression of Oaxacan cane-juice terroir for drinkers who love clairin, agricole blanc and high-ester whites.
How to Enjoy
Approach it like a great clairin: tiny neat sips to meet it at full strength, then in a Ti’ Punch or a daiquiri where its funk does the work of three ingredients. A few drops of water open the lactic fruit considerably. Stock the rest of the build from our cocktail ingredients.
Frequently Asked Questions
Why is it so strong?
It is bottled at pot still strength — 71.1% ABV, exactly as it came off the copper alembics, with no dilution. (Note: some retailer copy misstates this bottling at 77.1%; the label reads 71.1%.)
Is it aged?
No — it is an unaged white rum, which is why the cane and fermentation character show so purely.
What is a Krassel still?
The family’s own continuous column design, invented by Max Krassel. This expression skips it entirely — copper pot stills only.
