Two Months, Old-School Process
Two months is a whisper of oak — which is exactly the point. Amatitena is made the pre-shortcut way: agave cooked in a mesquite-wood-fired stone oven without steam, milled by tahona, fermented in the open air with the agave fibers in wooden tinas on spring water and wild yeast, double-distilled in 19th-century copper pot stills. The reposado just kisses the barrel, keeping the agave's voice front and center. Tasting Notes
Per the Skurnik importer: aromas of subtle butterscotch, fresh brick powder, light resin and green pea shoots; a palate of sweet roasted carrot, raspberry sherbet, soft baking spices, wet tile, faint orange rind and honeydew; a finish of crème brûlée and golden beets.
