A Butterfly With Glass Wings
The Krassel family has distilled sugarcane spirit on the steep hillsides of Santa Maria Tlalixtac, in Oaxaca's Canada region, for three generations - German immigrant Max Krassel began with a handmade still on a coffee farm in the 1930s, and today his grandsons Rommel, Axel and William run the stills. Every Alambique Serrano rum starts with organic Java-varietal cane grown between 2,500 and 3,800 feet, hand-harvested and pressed in mobile mills, fermented with wild yeast, and distilled on the family's custom-built Krassel column and copper pot stills. Nothing is added - no sugar, no coloring, no flavoring - and PM Spirits imports the rums to the United States. The Mariposa Vitral (Ithomia leila) is a delicate, slow-flying butterfly whose translucent, glass-like wings make it hard for predators to spot; it feeds on nightshades in the cloud forests of southeastern Mexico. The blend named for it is just as layered - French oak structure, Hungarian oak spice and an old Cognac-cask depth, all fermented in pine tanks with ambient yeasts from Java-varietal cane grown at 2,500 to 3,800 feet. Tasting Notes
Orange peel, drinking chocolate and toasted cacao on the nose. The palate opens with a pleasant attack of orange soda, apple cider, bitter sugar and toasted grape jam, with an aftertaste of palo de chile and a hint of cucumber - the family's signature savory-cane twist.
How to Enjoy
Neat first, then with a few drops of water to unfold the Hungarian oak and Cognac-cask layers. Vida Nativa completists should compare it with Vida Nativa Blend #3 Tepejilote and the five-cask Besadiablos Blend #11, or find it among the gift-ready bottles in our Holiday Gift Guide.
