Alambique Serrano Altos Esteres 3rd Edition Rum
Alambique Serrano Altos Esteres 3rd Edition Rum is the third edition of the Krassel family's high-ester pot still rum from Santa Maria Tlalixtac, Oaxaca, Mexico, bottled at pot still strength - 64.8% ABV (129.6 proof) - in a 700mL bottle, distilled from 100% Mexican sugar cane. 'Altos Esteres' - high esters - is the family's ester-maximizing experiment: cane juice given an extended wild fermentation in pine and steel vats to build explosive aromatics before pot distillation, then bottled at full strength with nothing added. It follows the sold-through Altos Esteres 2nd Edition at a new, third-edition strength. It is available to order online at Del Mesa Liquor.

Oaxaca's Answer to Jamaican Funk
The Krassel family has distilled sugarcane spirit on the steep hillsides of Santa Maria Tlalixtac, in Oaxaca's Canada region, for three generations - German immigrant Max Krassel began with a handmade still on a coffee farm in the 1930s, and today his grandsons Rommel, Axel and William run the stills. Every Alambique Serrano rum starts with organic Java-varietal cane grown between 2,500 and 3,800 feet, hand-harvested and pressed in mobile mills, fermented with wild yeast, and distilled on the family's custom-built Krassel column and copper pot stills. Nothing is added - no sugar, no coloring, no flavoring - and PM Spirits imports the rums to the United States. Altos Esteres is where that tradition goes furthest out: a long, wild fermentation designed to build the kind of explosive aromatics usually associated with Jamaican pot still rum, but in a drier, more savory Oaxacan register. Tasting Notes
The high-ester profile the Altos Esteres program is known for: aloe vera, watermelon agua fresca, stewed plantain, raspberry marzipan, cinnamon candy and orange oil on the nose, then a palate bursting with tropical fruit, lime zest, watermelon and cucumber - funkier and more aromatic than anything else in the range, with the raw intensity of a spirit bottled at pot still strength.
How to Enjoy
Add water, take your time, and taste what high-altitude Oaxacan cane does when nobody tames it. A small measure transforms a Daiquiri built from our cocktail ingredients, or sip it neat if you are brave. High-ester hunters will find more trophies in our rare and top shelf collection.
Frequently Asked Questions
What does 'Altos Esteres' mean?
'High esters' - esters are the aromatic compounds built during fermentation. An extended wild fermentation pushes the ester count far beyond a standard rum, which is where the explosive tropical funk comes from.
How is the 3rd Edition different from the 2nd?
It is a new edition bottled at 64.8% ABV (the 2nd Edition was 69.9%), from the same high-ester pot still program - a distinct bottling, not a restock of the earlier edition.
How strong is it and what size is the bottle?
Pot still strength at 64.8% ABV (129.6 proof), in a 700mL bottle.
Is anything added?
No - like every Alambique Serrano rum, it is bottled with no added sugar, coloring or flavoring.
