Alambique Serrano Altos Esteres 2nd Edition Rum
Alambique Serrano Altos Esteres 2nd Edition Rum is an unaged, high-ester pot still rum from Alambique Serrano, the Krassel family's distillery in Santa Maria Tlalixtac, Oaxaca, Mexico, bottled at pot still strength, 69.9% ABV (139.8 proof), in a 700mL bottle. 'Altos Esteres' — high esters — starts with organic Java-varietal cane grown between 2,500 and 3,800 feet, hand-harvested and pressed in mobile mills, then given an extended wild fermentation in pine and steel vats built to maximize ester count before distillation. Bottled straight off the still with nothing added and no aging at all. It is available to order online at Del Mesa Liquor.

Oaxaca's Answer to Jamaican Funk
The Krassel family has distilled sugarcane spirit on the steep hillsides of Santa Maria Tlalixtac for three generations, since German immigrant Max Krassel began with a handmade still on a coffee farm in the 1930s; today brothers Rommel, Axel and William run the stills, and PM Spirits imports their rums to the United States. Altos Esteres is the family's high-ester experiment — a long, wild fermentation designed to build the kind of explosive aromatics usually associated with Jamaican pot still rum, but in a drier, more savory Oaxacan register. Find its aged siblings and more Mexican cane spirits in our rum collection and spirits range.
Tasting Notes
Wildly aromatic: aloe vera, watermelon agua fresca, madonna lily, stewed plantain, raspberry marzipan, cinnamon candy and orange oil on the nose. The palate bursts with tropical fruit, lime zest, watermelon and cucumber — funkier and more aromatic than anything else in the range, with the raw intensity of a spirit bottled straight off the still at 69.9%.
How to Enjoy
Add water, take your time, and taste what high-altitude Oaxacan cane does when nobody tames it. Built for a serious Daiquiri — a small measure transforms drinks built from our cocktail ingredients — or sip it neat if you are brave. High-ester hunters will find more trophies in our rare and top shelf collection.
