Billy Walker's Return to Blending
Fifty years ago, Billy Walker began his whisky career as a blender — and with White Heather, relaunched in 2021, he returned to his roots. The 15-year-old is built the old way: malts from Speyside, Islay, and the Northern Highlands married with selected grain whiskies at The GlenAllachie Distillery in Aberlour, then laid down for a second maturation. Twelve years in American oak and sherry butts, then three more in Pedro Ximénez and Oloroso puncheons plus virgin American oak — bottled at a sipping-friendly 46% with nothing added and nothing taken away. It won Gold at the 2022 IWSC, and it is Walker's proof that age-statement blends deserve the same reverence as single malts.
Tasting Notes
Nose: waves of heather honey and butterscotch, orange peel, pineapple, mint, and a hint of peat — shea butter, pomegranate seed, walnut skin, white chocolate, and candied fig. Palate: layers of treacle, heather honey, and butterscotch, orange peel, grapefruit, and almonds, with mocha, ginger, and a light wisp of peaty smoke. Finish: morish and lingering — chocolate-cream wafer with a touch of angelica and salt.
