Stellum Bourbon Whiskey
Stellum Bourbon Whiskey is the bourbon half of Barrell Craft Spirits' Stellum line — a 57.49% ABV (114.98 proof), 750mL straight bourbon bottled at cask strength. The blend is built from three Indiana bourbon mash bills — two high-rye and one almost exclusively corn — with older Kentucky and Tennessee barrels folded in through a multi-step blending process in Louisville. The range across those mash bills shows in the glass: clove and allspice, creamy macadamia and light tobacco, honeysuckle and green apple, then vanilla-marshmallow sweetness cut by black pepper, cayenne and cinnamon-baked apples. Gold at the 2021 San Francisco World Spirits Competition. It is available to order online at Del Mesa Liquor.

The Accessible Cask-Strength Line
Joe Beatrice built Barrell Craft Spirits on small-batch blending, then created Stellum as the everyday door into that world — same blenders, same cask-strength intensity, regular availability. Using three distinct Indiana mash bills gives the bourbon unusual range: corn-driven sweetness from one, rye spice from two, and mature Kentucky and Tennessee oak underneath it all. It is a fixture of our bourbon whiskey shelf, and the Stellum Spirits collection pairs it with the cask-strength rye.
Tasting Notes
Nose: Clove and allspice, creamy macadamia, light tobacco; honeysuckle, green apple, nectarine. Palate: Vanilla, marshmallow and cotton-candy sweetness giving way to black pepper, cayenne, cinnamon baked apples, tart blackberry and apricot. Finish: Candied ginger and black pepper settling into syrupy honey.
How to Enjoy
Neat with a slow dilution — a few drops of water at a time turns 114.98 proof into a long, evolving pour. It makes a serious, high-proof Old Fashioned for drinkers who want the whiskey to win.
