Springbank does things no other Scottish distillery still does all of: it floor-malts 100% of its own barley, distils it two and a half times — a partial third pass unique to the house — and carries out every stage from malting to bottling on its single Campbeltown site, as the Mitchell family has run it since 1828. The 15 Year Old is where that process meets sherry wood: matured in sherry casks, it trades the 10 Year Old's bourbon-cask brightness for the darker register of Christmas cake, dark chocolate and dried fruit, with Springbank's signature lightly peated, faintly maritime funk running underneath. Per the distillery's official notes: a nose of demerara sugar, dark chocolate, Christmas cake, almond, toffee and oak; a creamy palate of raisin, dark chocolate, fig, marzipan, Brazil nut and vanilla; and a finish of oak and sherry with leather. (Springbank rotates its published notes by batch; this is the distillery's long-standing set for this expression.)
