Proof & Wood Roulette Rye
Proof & Wood Roulette Rye is a 100 proof (50% ABV), 750mL straight rye whiskey distilled in Indiana at MGP and bottled in Bardstown, Kentucky, by Proof & Wood Ventures. Built on a 95% rye, 5% malted barley mash and aged a minimum of 3–4 years depending on bottling in 53-gallon barrels, it is bottled non-chill filtered in small batches. Proof & Wood, founded in 2015 by Dave Schmier as an independent blender and bottler, built its name on sourced whiskey bottled with intent — Roulette is its straight-rye bet. It is available to order online at Del Mesa Liquor.

A Blender's Bet on Indiana Rye
Dave Schmier founded Proof & Wood in 2015 to bottle sourced American whiskey on its merits, and Roulette Rye is the house straight rye: the classic 95/5 Indiana mash, small batches, a full 100 proof, and no chill filtration to soften the spice. It sits proudly on our rye whiskey shelf and among our American whiskey range; the Proof & Wood Ventures page carries its sibling bottlings.
Tasting Notes
Nose: Orange marmalade, fresh thyme, and clove. Palate: Full and waxy, with cherry and dark fruit, rye spice, and pleasant tannin. Finish: Black pepper, rosemary, and browned butter.
How to Enjoy
At 100 proof it is a natural Manhattan and Old Fashioned rye — the spice cuts through sweetness — and it rewards a neat pour with a splash of water.
