Annabel Thomas left her London job in 2013, spent four years raising funds, and built Nc'nean from scratch on the west coast of Scotland — a distillery powered by renewable energy that recycles 99.97% of its waste and whose annual carbon footprint is, in the distillery's words, "less than one return plane journey from London to New York." The late Dr. Jim Swan mentored the setup (one of his last projects). The whisky itself is deliberately gentle: slow mashing, a 114-hour fermentation, slow distillation, even an hour's rest off the still — all to accentuate delicate, fruity flavors. The result is zesty and fresh rather than heavy: lemon posset, orchard fruit, and juicy peach against a spiced rye-bread warmth. Sustainable, yes — but bought again because it tastes good. Tasting Notes
The nose is abundant with lemon posset and lemongrass over soft orchard fruit and light spice. The palate brings juicy peach, apricot, tangy citrus, and vanilla creaminess over cereal sweetness and oak. The finish is smooth and lingering, with fruity sweetness, gentle spice, and spiced rye bread on the dry close.
