Israel's climate — roughly 300 days of sun a year — is the secret ingredient here: heat accelerates maturation, so a young whisky develops mature flavor far faster than in Scotland, and the distillery hired the late Dr. Jim Swan, the world's foremost expert in hot-climate whisky, as an advisor. The STR casks (red wine barrels shaved, toasted, and re-charred) contribute a "new-oak-meets-wine-cask" character alongside the classic ex-bourbon backbone, landing a light, balanced dram with vanilla, caramel, honey, and light pepper spice. Tasting Notes
The nose shows red apples, mandarin, nectarine, and peach over beeswax and floral notes with a slight cough-syrup sweetness. The palate is oak-driven but polished — nutmeg, clove, honey sweetness, and light pepper. The finish dries nicely on spice and oak, with the apple note returning at the end.
How to Enjoy
