Gold Bar was founded in 2013 in San Francisco and distills and welcomes visitors on Treasure Island, in the historic former Pan-Am terminal at 1 Avenue of the Palms, under master blender Montgomery Paulsen, a second-generation Napa Valley winemaker. Wine-cask finishing is the house signature, and Diamond Edition is its most luxurious expression: nearly two decades in barrel, a Cognac-cask finish, and a final polish from toasted French oak staves, bottled in Gold Bar's signature gold-bar bottle. Kyle Chan — whose jewelry has appeared in La La Land, Vanderpump Rules and Bling Empire and on Beyonce, Taylor Swift and Lady Gaga — lends the edition its name and its gem-cut presentation.
Tasting profile: deep caramel, toasted oak and vanilla bean on the nose with dried fruit and floral lift; dark chocolate, dried fruit, warm baking spices and vanilla on the palate; a long, smooth finish with subtle smoke, spiced toffee and lingering sweetness.
