Billy Walker built his reputation on long-aged sherried malt, and Batch 3 of the 30-year-old is the statement piece: early-1990s casks — PX and Oloroso sherry hogsheads plus a measure of American virgin oak — holding GlenAllachie's honeyed Speyside spirit for three decades. As Walker puts it, "expect a refined whisky that exudes notes of rich cocoa, orange zest, honeycomb and cinnamon." Tasting Notes
Per the official distillery press release: colour — deeply rich mahogany. Nose — roasted almonds, honey and orchard fruits with worn leather, butterscotch, orange zest and dark chocolate. Taste — grape must, hazelnut and honeycomb, citrus fruits, toffee brittle, ginger spice, with cinnamon and mocha on the finish.
How to Enjoy
Neat in a tulip glass, room temperature — a whisky this long in sherry wood needs nothing else. A teaspoon of water is optional for the 48.9% strength.
