The "Double Double" name describes Dewar's four-stage process: the malt whiskies age 37 years in oak, are blended and re-casked, then after a month married with the previous Double Double 36 Year Old and warehoused again — and finally finished in ex-Oloroso sherry casks that held Speyside's Aultmore, whose grassy, herbal notes come through the seasoned wood.
