The "21" is a minimum age: every drop in the blend is at least 21 years old, drawn from rums aged 21 to 25 years in 45-gallon oak casks within six degrees of the equator, where tropical heat accelerates spirit-wood interaction far beyond temperate climates. The heritage stills are the story: component rums come from the Enmore wooden Coffey still (the last surviving wooden continuous still in the world), the Versailles single wooden pot still, and the Albion Savalle column still. In the glass: mocha, toffee, tobacco and dark spices on the nose; super mellow and dry on the palate with fruit, coffee, toffee, smoke and brown spice (CW Spirits). Nose: mocha, caramelized toffee, pipe tobacco, ripe tropical fruit, toasted oak, nutmeg, clove, banana (Liquor Barn). Palate: dark chocolate, molasses, deep coffee, toffee, leather, sultanas, dates, blackcurrant. Finish: long; fried banana, raisins, cinnamon, sandalwood.
