The Rums of Mexico Cana Criolla Rum
The Rums of Mexico Caña Criolla Rum is a traditional Mexican sugarcane juice rum from PM Spirits’ Rums of Mexico project, made by second-generation aguardientero Pedro Bautista in Zoquiapam Boca de los Ríos, Oaxaca, from heritage Criolla cane cultivated by Daniel Vega Santiago, bottled at 51.9% ABV in a 700mL bottle with nothing added after distillation. The fresh-pressed juice ferments for more than 20 days in closed 1,100-litre tanks, then runs through the handmade, wood-fired four-plate copper still Bautista has operated for two decades. It is available to order online at Del Mesa Liquor.

Traditional Aguardiente, Bottled With Full Transparency
The Rums of Mexico bottles the traditional cane spirits of Mexico that locals call aguardiente, cañita or simply ron, naming the farmer, the village, the cane and the still on every release. Bautista’s cane grows among columnar cactus near the Río Monteflor, harvested at around two years old and crushed promptly; the long ferment and his 20-year-old four-plate still give the spirit real backbone with a clean, mineral clarity. Tasting Notes
Per the producer’s tech sheet: sourdough, apricot and mango on the nose. Almond, currants, bubblegum and sour cherries on the palate, with the green cane, white pepper and dry, stony character of a long-fermented cane juice spirit.
How to Enjoy
The connoisseur’s pick of the line: sip it neat to follow the cane, or use it where a blanco agricole would go — a Ti’ Punch or a Daiquiri with real grip. Pair it with its Veracruz siblings in our gift sets for a Mexican cane tasting.
