Holmes Cay Fiji 21 Year Old Rum 2004 is a single cask, 100% pot still rum from The Rarest Selections, Holmes Cay's top tier. Distilled in 2004 at South Pacific Distillery in Lautoka, Fiji, from locally produced molasses, it spent 21 years in a single American oak cask — 12 years aging in the Fiji tropics, 5 more years in the UK, and a final 4.5 years in New York state — before bottling in 2026 at full proof, 58% ABV (116 proof), with no additives. The cask yielded just 194 bottles. It is available to order online at Del Mesa Liquor.

The Story

South Pacific Distillery has been making rum in Lautoka since the 1980s, and its pot still marks are among the most distinctive in the rum world — weighty, characterful spirits that reward long aging. Holmes Cay built its Rarest Selections line around exactly this kind of cask. The Fiji 2004 comes from the same stocks as the Fiji 17 Year released a few years ago; one cask was held back and left to keep maturing, first in the UK and then in Holmes Cay's New York warehouse, until it reached 21 years. Bottled at full proof with nothing added and nothing taken away, it is Fijian rum at its most uncompromising.

Tasting Notes

Nose: Vanilla and fresh banana. Palate: Bright citrus and pepper over a layer of buttery caramel, the pot still weight carrying the flavors through. Finish: Pleasingly dry, with the oak and spice lingering after the fruit fades.

How to Enjoy

This is a sipping rum built for a quiet pour: give it a few minutes in the glass neat, then try a few drops of water to open up the caramel and citrus. Collectors of high-proof single cask rums will find the full 58% ABV rewarding straight from the bottle.
