Alambique Serrano 3 Años 2nd Edition Rum is an aged cane-juice rum from the Krassel family in Santa María Tlalixtac, high in the Cañada mountains of Oaxaca, Mexico — an eleven-cask blend of 87% Krassel column still and 13% copper pot still rum, aged a minimum of three years in ex-bourbon barrels and new French oak and bottled at 46.4% ABV in a 700mL bottle. The cane is Java varietal, grown on steep hillsides and naturally fermented, and the rum is proofed with water from the Río Blanco — with no added sugar, no added colour and no chill filtration. It is available to order online at Del Mesa Liquor.

Rum From the Oaxacan Cloud Forest

Alambique Serrano is the Krassel family’s single-origin rum project: the family farms its own Java cane on slopes so steep the harvest moves by animal and gravity, ferments the fresh juice naturally, and distills on stills of its own design — a custom Krassel column and a small copper pot still in the mezcal tradition. The 2nd Edition of 3 Años marries the two distillates and rests them tropically in ex-bourbon and new French oak, then brings the blend to proof with Río Blanco water, so the mountain terroir is quite literally in the bottle. Fans call it a “Baby Pico Canoa” for its wild fruit and spice. Browse more Mexican and cane-juice bottlings in our rum collection and the wider spirits shelves.

Tasting Notes

Fresh and tropical on the nose. The palate is crisp and wild — juicy watermelon, lime zest and cucumber over warm spice, ginger and nutmeg from the French oak — finishing clean and dry with the grassy lift of fresh cane juice. Nothing about it tastes like a Caribbean rum, and that is the point.

How to Enjoy

Sip it neat or with a single cube to open the fruit, or build a daiquiri that actually tastes of the cane. Find limes, syrups and the rest of the build among our cocktail ingredients.
