Extra Mature: the agaves came from what was, as far as anyone knows, the last remaining field of 8-year-old agave in all of Jesús María, with exceptionally high sugar content. Extra Madera: 30% of this lot fermented in traditional wooden tinas, something the distillery almost never does for its high-proof releases. Together they make a blanco of uncommon depth.
