Don Amado Mezcal Tripon, Barril, & Bicuishe is an all-Karwinskii ensamble — 46% ABV (92 proof), 750mL, made from three varieties of Agave karwinskii (Tripon, Barril and Bicuishe) grown at 4,800 feet in San Pablo Apostol, Oaxaca, and double distilled in ceramic clay pots in Santa Catarina Minas. Unaged and bottled as a joven, it is a study of one agave family in three voices. It is available to order online at Del Mesa Liquor.

Three Karwinskii, One Family Portrait

Most ensambles mix agave families; this one stays home. Tripon, Barril and Bicuishe are all local forms of Agave karwinskii — the tall, trunk-forming species of Oaxaca's dry hills — and Don Amado roasts, ferments and distils them together so their differences read as harmony rather than contrast: Barril's roundness, Bicuishe's woody depth, Tripon's bright lift. The process is the house signature, unchanged for generations in Santa Catarina Minas: earthen pits, pine vats, airborne yeast and ceramic pot stills. Browse its siblings in our mezcal collection, see the wider tequila and mezcal range, or check the Don Amado vendor page.

Tasting Notes

Nose: Pastry-sweet — wild honey, green apple peel, tart cider, pear and white grape over roast agave. Palate: Bright sweetness with green herbs and overripe nectarine. Finish: Medium and smooth, the herbal Karwinskii character carrying through.

How to Enjoy

Neat in a copita is the way to hear all three varieties. It also makes a fascinating split-base with a blanco tequila in a Margarita riff, where its green, herbal side lifts the drink.

Frequently Asked Questions

What are Tripon, Barril and Bicuishe? They are three named varieties of Agave karwinskii, the trunk-forming agave family of Oaxaca. Each has its own shape and flavour register, and mezcaleros have blended them for generations.

Is there Espadin in this mezcal? No. Unlike many ensambles, this one is entirely Karwinskii — there is no Espadin anchor in the blend.

How is an ensamble different from a single-varietal mezcal? A single-varietal bottling isolates one agave; an ensamble like this one cooks and distils several together, so the final spirit is a true field blend.
