Don Amado Mezcal Rustico is a 750mL unaged clay-pot mezcal bottled at 47% ABV, made from 100% fully mature Espadin agave in Santa Catarina Minas, Oaxaca. The flagship of the Real de Minas Distillery, it is earthen-roasted on firewood embers, fermented with its fibres in pine vats on airborne yeast, and slowly double distilled in ceramic pot stills by maestro mezcalero German Bonifacio Arellanes — then bottled with no ageing at all, so what reaches the glass is the purest read on the minero method. The brand describes the clay pot up front — ash, crushed walnuts, roasted corn and savoury spice on the nose — over a bright citrus Espadin palate balanced by caramel, butterscotch and fresh herbs, with present but never overwhelming smoke.
