The Vintage, Elevated to Its Second Life
Dom Perignon's mature vintages were released as "Oenothèque" until the 2014 rebrand to "Plénitude" — the idea that a great vintage has more than one peak. P2 is the second of those peaks: the 2004, which began harvest on September 24 after a cool August and dry pre-harvest heat, given nearly fifteen more years in the cellar to reach full expression. Chef de cave Vincent Chaperon calls it "so easy to drink, so harmonious... the most ethereal, the most airy, the most gravity-defying wine of our operation." Tasting Notes
The maison's notes: in this second plénitude, the fruit starts discreet then gains definition — pink grapefruit and blood oranges transitioning to fig; extended lees aging enhances minerality, with cocoa, mocha, roasted nuts, brioche, and honey; creamy and energetic, oscillating between tension and weightlessness, finishing persistent and elegant with lingering licorice. Wine Advocate (95): sweet orchard fruit, fresh peach, pastry cream, buttered toast, and cotton candy; medium to full-bodied, pillowy, with a long, sapid finish. Decanter (94): open, deeply umami and nutty — sweet plum, lime, and caramelised peach.
How to Enjoy
Serve at 50–54°F in a white-wine glass, not a flute — the P2's volume and texture need the air. Decanting a mature prestige cuvée is no crime. For the milestone dinner, not the toast.
