Bartender Giancarlo Mancino built the house in Canelli on pre-industrial Piedmont recipes, and the Secco leans on the Italian kitchen garden — sage, marjoram and oregano in a nineteen-botanical charge over Trebbiano — so the wine tastes seasoned rather than simply dry.
