Guyana once had hundreds of sugar estates, each with its own still; Demerara Distillers consolidated the survivors at the Diamond Distillery, the country's last remaining distillery. The 15 Year Old draws on all four heritage still types — the Enmore wooden Coffey still, the Diamond metal Coffey still, the Port Mourant double wooden pot still, and the Versailles single wooden pot still — then blends the aged rums in old bourbon oak.
