Yeni Raki is distilled from suma — the grape distillate at the heart of every raki — which is distilled a second time, then redistilled four more times in copper pot stills with aniseed. Where standard raki rests 48 hours before bottling, Uzun Demleme ("long brew") rests a full 72 hours, softening the spirit and deepening the anise character. No sugar is added at any stage.
