Raising Glasses Pelee's Fury 3 Oloroso Finish Rum
The third eruption in Raising Glasses' Pelee's Fury series takes Le Galion's grand arome — Martinique's intensely funky, vinasse-fermented molasses rum — and finishes it for ten months in an Oloroso sherry quarter cask. The small cask works fast: figs and cured-meat depth from the sherry wood settle into the rum's wild tropical base, bottled at 60.5% ABV in a 375mL bottle. It is number 24 in the bottler's Folklore Series, and one of the most characterful half bottles in our rum collection.

The Story
Mount Pelee's 1902 eruption levelled Saint-Pierre, then the cultural heart of Martinique; the Fury series honours the island's power and resilience with label art by Razigla and Cait Springer. Grand arome itself is a survivor — Le Galion still ferments with vinasse for the huge aromatic concentration that once flavoured a continent's patisserie. The Oloroso quarter cask finish is the series' most savoury turn, and 5% of profits support Lesmanicobleus, a Martinique animal welfare charity. The bottler's Madeira-cask Raising Glasses Ethereal 3 Year Old Madeira Rum 2020 shows the same finish-first imagination.
Tasting Notes
Figs and cured meats from the sherry cask ride over wild tropical fruits, black olives, candied prunes and salted almonds — savoury and funky in equal measure, with a dry, nutty grip on the finish.
How to Enjoy
Neat, rested, in small pours — the quarter-cask sherry influence rewards attention. It is also a secret weapon in stirred rum drinks that want a savoury edge. Round out a Raising Glasses tasting with the Raising Glasses The Whistler 14 Year Old Rum.
Frequently Asked Questions
Why a quarter cask?
A quarter cask is much smaller than a standard barrel, so the rum meets more oak and sherry-seasoned wood per litre — ten months in one does the work of a far longer standard finish.
What is grand arome?
Le Galion's intensely aromatic molasses rum style, built on long fermentations with vinasse; think Jamaican-level funk from Martinique.
What is the ABV?
60.5% (121 proof), bottled in a 375mL format.
