Hunting Jabali in the Cliffs

In Albarradas, Jabali does not grow in fields — it clings to the mountain cliffs, taking over 15 years to mature, and harvesting it is a team effort: Ruben works side by side with his sons Emmanuel and Adolfo, who climb and bring the plants down. Seventy heads weighing 1,253 kg were harvested on September 22, 2021 to produce only 103 liters. The hearts were roasted five days in a conical earthen oven fired with oak, crushed by hand with machete and wooden mallets, and fermented eight days in 1,000-liter oak vats with natural yeast and stream water, supported by tepehuaje bark — a local solution that keeps the cold-climate fermentation working on this notoriously difficult agave. On October 27, 2021 the spirit was distilled twice in an 80-liter handmade clay pot, then rested five years in glass before bottling on September 25, 2026. Compare it with the clay pot-distilled Tepanal Ancestral Espadin Capon Mezcal.

Tasting Notes

Highly floral, earthy and mineral, with an unmistakable taste of Santa Catarina Albarradas. The five-year glass rest has rounded the spirit into harmony — light and smooth at 48.3% ABV.

How to Enjoy

Frequently Asked Questions

What does "ancestral" mean here?

The most traditional production method: earthen-oven roasting, hand crushing, wood-vat fermentation and distillation in a handmade clay pot — here an 80-liter clay still.

How much was made?

70 wild Jabali agaves (1,253 kg) yielded 103 liters; after five years resting in glass, the release was bottled into 102 bottles of 750mL.

Is this a certified mezcal?

It is bottled as a destilado de agave — a 100% agave spirit made traditionally in Oaxaca outside the certified mezcal system.
