Two Wild Agaves from Velato
The Jabali here is endemic to the Velato region, growing in family groups along the edges of the roads — a smooth Jabali quite unlike those of Oaxaca's northern and southern sierras — while the wild Madrecuishe brings structure and resinous depth. The agaves, 12 to 15 years old at harvest on April 12, 2023, were left "tumbados" in the field for two to three weeks to concentrate their sugars, then roasted six days in a conical earthen oven with guamuchil and oak, crushed by machete and tahona, fermented naturally for seven days in 1,000-liter sabino vats with well water, and double-distilled on June 28, 2023 in a 300-liter copper pot still with refrescadera. The spirit then rested three years in glass before bottling on September 25, 2026. For another Karwinskii-led bottling, see the Palenqueros Valente Garcia Madrecuishe Mezcal.
Tasting Notes
Fresh and resinous, with pine and mint over a silky texture — the three years in glass have settled the spirit and smoothed its edges, making it very easy to sip neat at 48% ABV.

Frequently Asked Questions
What agaves are in the blend?
40% wild Jabali (Agave convallis) and 60% wild Madrecuishe (Agave karwinskii), both from the Velato region of Miahuatlan, Oaxaca.
Why does the label say aged 3 years in glass?
After distillation in June 2023, 52 liters rested in glass demijohns for three years before bottling — a traditional rest that softens and integrates the spirit without wood.
Is this a certified mezcal?
It is bottled as a destilado de agave — a 100% agave spirit made traditionally in Oaxaca outside the certified mezcal system.
