Pere Labat Blanc Rum is the classic rhum agricole blanc of Distillerie Poisson on Marie-Galante, Guadeloupe — the estate's everyday “40” — distilled from fresh-pressed sugarcane juice and bottled at 40% ABV in a generous 1L bottle. The estate grows four local cane varieties — red, white, blue and gray, all hand-cut — and ferments the juice for 72 hours into a vin de canne before distillation in one of Poisson's two copper Creole column stills.
