Into the Bottle
Ritual Sister begins at the fire pit: roughly 800 lbs of whole fresh pineapples at a time are buried in hot coals and roasted and smoked for one to four days. The roasted fruit then ferments whole for one to eight weeks in a pied de cuve of evaporated pineapple juice and mineral water with Champagne yeast — never any added sugar or nutrients — before the fermented juices are crushed and distilled together with the solids in a single run through Matchbook's pot-column still.
