A Bourbon Built From New York Soil
Matchbook Distilling describes itself as an R&D facility dedicated to spirits that champion agriculture, anthropology, tradition and science — and Metamodernity is its flagship bourbon. The corn and wheat are grown by Thor Oechsner of Oechsner Farms, the oats come from Lake View Organics, and the barley is grown in New York and malted by Valley Malt. The oats are roasted in a coffee roaster before mashing; at only 5% of the mash bill, Matchbook credits them with the bourbon's rich mouthfeel and its unmistakable finish of sesame seeds. It is a grain-forward take on American whiskey that tastes like the farms it came from.
Tasting Notes
Baking spice, roasted nuts, caramel and a deep umami savoriness up front, opening into corn-muffin sweetness and toasted grain, and closing on that signature sesame-seed aftertaste from the roasted oats.
How to Enjoy
Matchbook's own suggested serve: sip it neat first, then add a splash of water to open up the grain. It also makes a characterful Old Fashioned. For another side of the distillery, try the Matchbook Distilling Eldest Daughter Vermouth, and compare this wheated recipe with the distillery's rye in the rye whiskey section.
