The three-batch method is almost unheard of in the añejo category, and the sherry casks layer dried fruit, roasted nuts, and warm baking spice over deeply developed cooked-agave character. Notes run to roasted agave, apricot, dried mango, old leather, cacao, orange blossom, and cardamom on the nose; a velvety palate of pepper, toasted salted almonds, cooked agave, and dried mango; and a long, textured, sherry-nutty finish. All copper-distilled at La Tequileña (NOM 1146) in Tequila, Jalisco, from highland agave grown by the Fonseca family — agave farmers for some 140 years — using Don Fulano's unusual dual still system (traditional copper pot plus old-style double column, 12–16% of distillate). Among sherry-cask añejos, this is one of the most technically ambitious ever bottled.
