Fifteen Years in One French Oak Cask
Du Tertre works the slow way: the cider ferments for about a year in used oak and is distilled only when the juice is totally free of sugar, on a ten-plate Orthez column still by a traveling distiller. The domaine's casks then rest 15 to 20 years, and every one is bottled at its natural cask strength with nothing added — this 2006 cask is a single-barrel snapshot of a vintage, not a blend. It sits at the top of our Calvados shelf, alongside the classic blended age statements of Chateau du Breuil 15 Year, and earns its place in our rare and top shelf collection. Tasting Notes
K&L's buyers call the 2006 “soft, rich, and oozing with baking spice, intense earth, and cooked pomme fruit — the top of the line for 15+ year old Calvados.” At full cask strength the baked-apple depth runs long, with the spice and earth of a long French oak rest.
How to Enjoy
Neat, after dinner, in a tulip or snifter — give it air and let the cooked apple and baking spice unfold. A few drops of water will loosen the cask-strength frame without thinning the fruit.
