Chagual Mezcal Jabali
45% ABV (90 proof) | 750mL | Wild Agave Convallis | Matured 1 year | Chichicapam, Oaxaca | No additives — Chagual Jabali is wild-harvested Agave Convallis — "the King of Mezcals" — crafted by four generations of Maestros Mezcaleros in Chichicapam, Oaxaca using traditional artisanal methods with no additives, then matured one year before bottling at 45%. Jabali is notoriously difficult to work: the agave foams and expands during fermentation, and roughly 110 pounds of agave go into a single liter. Double Gold, San Francisco World Spirits Competition. Available to order online at Del Mesa Liquor in San Diego, CA.
The name Chagual comes from an ancestral Xochagual legend of a supernatural mountain being — fitting for a mezcal this wild. The official notes promise citrus (lemon, lime), herbal lift (eucalyptus, mint), and fruit (yellow apple, melon, blueberry): bold yet refined. Among wild-agave mezcals, Jabali is the connoisseur's agave — rare, finicky, and unforgettable.
