Co-founder Jason Brauner selected a seven-year-old bourbon (60% corn, 36% rye, 4% malted barley) for the distillery's proprietary double-oak finishing process — this time in 18-month-seasoned French oak from the Limousin region of France. Limousin oak's extra-fine grain structure, paired with a very light char, coaxes out flavors of dark brown sugar tipping into toffee, with notes of baking spice, dark honey, and dried apple — plus a round, luscious texture the French oak imparts on the palate. Brought back by popular demand after the last batch sold out in 2025.
