The Story

Sanchez Romate was founded in Jerez de la Frontera in 1781 and remains one of the oldest family-owned bodegas in the Jerez region. Pedro Ximenez is both a grape and a style: the sweetest corner of the sherry family, made entirely from the Pedro Ximenez grape rather than the Palomino used for the dry styles. In the Romate range, this fortified sweet wine is matured through the criaderas y soleras system, the fractional ageing method that has defined Jerez winemaking for centuries.

Tasting Notes

Very dense and dark mahogany in the glass. The aroma is soft and delicate, reminiscent of raisins, with ripe plum and fig notes and hints of honey. On the palate it is creamy and velvety, intensely sweet, with a persistent finish.

How to Enjoy

Serve at 10 to 12 degrees Celsius. It goes well with desserts, blue cheese and chocolate, and is rich enough to pour as a dessert in its own right.
