Bodega Sanchez Romate Oloroso Sherry is a dry, full-bodied oloroso from Jerez, Spain, made from Palomino Fino grapes and bottled at 18% ABV in a 750mL bottle. Unlike a fino, it ages oxidatively from the start, in contact with oxygen and with no flor covering, and spends at least five years in solera.

The Story

Founded in 1781 by Juan Sanchez de la Torre, Sanchez Romate is one of the oldest bodegas in Spain and one of the few Jerez houses still under independent family ownership. The bodega owns vineyards on the celebrated albariza soils of Jerez and ages its wines in traditional cellars in the centre of the city. This Oloroso comes from the classic Romate range: fortified Palomino wine aged through the criaderas y soleras system in American oak casks, breathing oxygen the whole way, which is what gives oloroso its depth, body and nutty richness.

Tasting Notes

Bright old gold to mahogany in the glass, with a deep, fragrant aroma. The palate is dry and full-bodied, layered with oak and nut flavours and hints of almond.

How to Enjoy

Serve between 12 and 14 degrees Celsius in a white wine glass, following the bodega's own guidance. It is a natural match for aged cheese, nuts, meats and consomme.

Frequently Asked Questions

What is the difference between oloroso and fino sherry?

A fino ages under a layer of flor yeast, protected from oxygen, and stays pale and light. An oloroso is fortified so that no flor forms, and it ages oxidatively instead, becoming darker, fuller-bodied and nuttier.

Is Romate Oloroso dry?

Yes. Despite its rich, full-bodied character, this is a dry sherry, with oak and nut flavours rather than sweetness.

What food pairs with oloroso sherry?

Aged cheese, nuts, meats and consomme are the bodega's recommended pairings.

How strong is this sherry?

It is bottled at 18% ABV, at the fuller end of the sherry range, in a 750mL bottle.
