The Story
Juan Sanchez de la Torre founded Sanchez Romate in Jerez in 1781, and more than two centuries later it remains one of the oldest bodegas in Spain and one of the few in the Jerez region still under independent family ownership. The house grows its grapes on the chalky white albariza soils of Jerez and ages its sherries in traditional high-ceilinged cellars in the centre of the city. This Fino is the classic aperitif bottling of the Romate range: a white wine made from Palomino grapes, fortified, and then matured under flor, the layer of yeast that forms on the surface of the wine and shapes its dry, vibrant character.
Tasting Notes
Pale straw in the glass, with a fragrant, floral nose. Blanched almond notes sit alongside a salty, olive brine character, and the palate is bone dry with pleasant acidity. The finish is long, with minerality and a lingering saltiness.
How to Enjoy
Serve this Fino well chilled, as an aperitif. It is ideal with appetizers, cheese, Iberian ham, shellfish and nuts, particularly salted almonds.
