Bayou Gator Bite Satsuma & Rum Liqueur
Bayou Gator Bite Satsuma & Rum Liqueur is a Louisiana artisanal blend of Bayou Rum infused with Satsuma oranges, made at the Louisiana Spirits distillery in Lacassine, Louisiana. Bottled at 30% ABV (60 proof) in a 750mL bottle, it takes the distillery's copper pot-distilled sugarcane rum and layers in the electric citrus of Louisiana-grown Satsumas — a Gulf Coast original in our liqueurs selection.

Born on the Bayou
Gator Bite was born of the success of Bayou Rum's original Satsuma liqueur, which now lives under the Gator Bite name. Louisiana Spirits runs the largest privately owned rum distillery in the USA, handcrafting Bayou Rum from locally grown sugarcane in the heart of Louisiana cane country. The Satsuma — a sweet, low-acid mandarin first planted in Louisiana in the 18th century — gives this liqueur its unmistakable regional character. Tasting Notes
Electric citrus up front — fresh, juicy Satsuma with a honey-like sweetness — rolling into what the distillery calls “hisses” of toasty oak from the rum base, and a silky, peppery, medium-length finish. It sits naturally alongside the other citrus bottlings on our orange liqueurs shelf, but with a softer, honeyed Louisiana accent all its own.
How to Enjoy
Sip it neat or over a big cube as a digestif, or put it to work in cocktails: the distillery's own Spiced Palmer mixes Gator Bite Satsuma with spiced rum, tea and lemonade over ice. It also swaps in beautifully for triple sec in a Margarita or rum punch, and a half-ounce floated on a Daiquiri adds a bright citrus snap.
Frequently Asked Questions
What is a Satsuma?
A Satsuma is a seedless, easy-peeling mandarin orange prized for intense sweetness and low acidity. Louisiana has grown them since the 1700s, and they are the signature flavor of this liqueur.
Is Gator Bite a rum or a liqueur?
Both — it is a rum liqueur: a base of Bayou Rum infused with real Satsuma oranges and bottled at 30% ABV, lower than a straight rum and made for sipping or mixing.
Where is Gator Bite made?
At the Louisiana Spirits distillery in Lacassine, Louisiana, by the makers of Bayou Rum.
